Frozen cakeThe frozen cakes from MUE «Minskhlebprom» are the products of high quality executed under traditional recipes, hands of confectioners of high level of preparation. Acquisition of the frozen pies is rather favourable to trading enterprises and public catering for many reasons, such as a long period of storage, possibility of delivery from the remote (target) supplier, absence of necessity of acceptance of the goods daily, possibility of the calculation of full assortment, operative giving of a portion of a pie to the consumer in cafeteria within an hour. The frozen pies are developed in the assortment, to corresponding names of pies before freezing, weight 0,5 kg and more, packed into special consumer packing. Are made according to requirements STB 961, on operating compoundings and the technological instructions, subjected to freezing and intended for realisation, as finished goods of the manufacturer.
The frozen pie before to become the goods, passes following technological processes:1. Manufacturing and cooling Pies are made according to operating Technical Normative Legal Acts (TNLA) on compoundings and technological instructions, with observance of sanitary rules and norms of manufacture of confectionery products. Quality should correspond STB 961. The made pies stack on a cardboard substrate and cool in the refrigerating chamber at temperature (4 +-2) wasps within 60-80 minutes. 2. Freezing The cooled pies place on metal sheets which establish on a trolley and freeze in the special freezing chamber in the way shock frosts at temperature (-30 +-5) wasps. Duration of freezing depends on set of factors and varies from 5 till 10 o'clock. 3. Packing The frozen pies on cardboard substrates (on operating TNLA) place in a polyethylene package, then stack in the special form from polyfoam and pack into a cardboard box. The packed pies keep within boxes from a cardboard in 13512 size goffered in accordance with GOST (380*285*220) mm resolved to application by Ministry of Health RB both guaranteeing integrity and safety of frozen pies. 4. Marks Marks of packed production on STB 1100, STB 961 with drawing of the additional information: - A thermal condition; - Recommendations about use according to a compounding; - Inscriptions: «repeated freezing is not supposed»; - Working life and conditions of storage after freezing. Transport marks with addition - a thermal condition. The frozen pies have periods of storage at temperature not above (-18 +-2) wasps till 6 months. Recommendations about use.The pie is ready to the use after freezing. Defrosting of pies spend in packing or preliminary having released from it. Defrosting modes: -at a room temperature: in weight 0,5 kg - 1-2 hours, 0,7 kg - 2-3 hours, 1,0 kg - 3-4 hours, depending on an ambient temperature.
